Nurturing Kale, Quinoa, Pumpkin, Ginger and Lentil Soup.

Nurturing Kale, Quinoa, Pumpkin, Ginger and Red Lentil Soup.
This soup i just invented is so delicious and comforting! It will make you feel good.
1 Tbs Olive Oil
1 diced brown onion
1 bullet chilli finely chopped (optional)
3 cloves of finely chopped garlic
1 10-20c piece of finely chopped ginger
1 tsp. coriander seeds
1/2 cinnamon quill
1 bay leaf
2-3 sprigs rosemary
Some thyme if you have some in the garden
1 cups rinsed red lentils
1/4-1/2 pumpkin chopped into 1 inch chunks
1 cup rinsed quinoa
1/2-1 bunch of chopped kale
1 stock cube
1 tsp Salt and some black pepper (to your taste)
4 chopped coriander plants (including the stems and roots)
Plain organic yogurt


Heat the oil in a large saucepan on a low flame
Add the  onion, chilli & ginger for a 2 mins (when onion starts going clear,not brown)
Stir in the garlic  and let it caramelise
Add coriander seeds and pumpkin and stir through
Pour in 1 litre boiling water from preheated kettle, and and turn up the heat!
Add lentils, quinoa, bay leaf, rosemary, thyme, vege stock and salt
Boil for 15 mins
Stir occasionally and add more hot water if not enough liquid
Turn down to a simmer and pop kale leaves and coriander stems/roots on top…add lid and let it steam through for 5 mins
Stir and leave to continue simmering for another 20-30
Take out cinnamon quill, bay leaf and rosemary stems and blend with a stick blender
Garnish with  fresh coriander leaves and yogurt

  •  Red Lentils have a neutral thermal nature. They are high in protein, calcium, iron & potassium.
